Sea Wolf Bakers
Thinking of baking sourdough, but fearful of making a starter? Have sourdough loaves that just don't seem to rise? Or just want to raise your bread-baking game? Book Larder is thrilled to be partnering with Sea Wolf Bakers to offer a Virtual edition of their wildly popular Sourdough 101.
Bakers from Sea Wolf will teach the key points of bread baking in this cook-along style class. They will show the bake using the cast iron method, score and bake a loaf so students can see what a fully proofed loaf looks like before it goes into the oven. You will learn how to hand mix, fold, and preshape your dough. They'll also cover the basics of a liquid sourdough starter, giving examples of a healthy starter and its feeding schedule. They will demo the final shape and take a freshly baked loaf out of the oven to show the crumb.
Baking Kits Included: We will provide; water flour, salt, levain, and a tea towel. This kit MUST be picked up the day of class between 11-2 at Book Larder.
Other Supplies needed to cook along: Mixing bowl, Proofing bowl, Bowl scraper, Small cup of water.
Suggested equipment: 5qt Lodge combo cooker or similar sized dutch oven, lame and disposable razor, scissors, or a small serrated knife.
How this works: This is a cook-along style class offered live via Zoom. Two days before class we will email you the recipe packet and a link to complete your registration via Zoom and get your personalized access link . You will have access to a recorded version of the class for one month afterwards. Online classes are non-refundable. Class is limited to 20 students.
